🥄 Easy Sausage and Butternut Bake
Quick-prep ahead comfort food for an easy weeknight dinner or a lazy weekend meal.
Let the oven do the work while you relax.
Ingredients (serves 4):
- 2 tsp paprika
- 1 tsp cumin powder

1 tsp fennel seeds (optional)

2 tbsp olive oil

1 tbsp tomato paste

1 tbsp honey

1 cup butternut, cut diagonally, sliced in 1 cm slices, and pealed

1 sweet potato, halved lengthwise and cut into 2cm chunks

1 red pepper, cut into wedges

1 yellow pepper, cut into wedges
- 2–3 yellow potatoes, cut into 2–3cm cubes
- 4–6 sausages (any kind – boerewors, or use your favourites)
- Salt & pepper to taste
Method:

Preheat your oven to 385°F (195°C).

In a large baking dish swish together the paprika, cumin, fennel seeds (if using), tomato paste, honey, and olive oil.
- Add all your chopped vegetables and tumble to coat. Easiest done with your hands!
- Place the sausages on top, sinking them into the vegetables.

Bake for 35 minutes. You can take the dish out and stir it once but not necessary. This dish literally makes itself!
Tips:
- This can be prepped in minutes ahead of time and left covered with a Spaza Dish Cover.
- Cut your veg evenly so everything roasts at the same pace.
- Serve straight from the tray with crusty bread or a green salad.
